Created only with botanicals foraged from landscapes, Buck & Birch was born in 2012 and is the brains behind Rupert Waites (head chef, production director and chief forager), alongside Tom Chisholm (creative director and liquid researcher).
2016 was their debut on the market and henceforth the release of their famous Aelder Wild Elderberry Liqueur. A firm favourite with customers, the brand continue to grow and are now proudly working with local landowners and community groups to enhance their local environment in Scotland in order to sustainably grow the business in a way that benefits, enhances and protects the the wild spaces of Scotland.
